Info about the wine
The A l'Ouest is named after the western orientation of the vineyard parcel with 40-year-old vines. The vines grow on a plateau of Portland marl with a high limestone content and citrine, a macrocrystalline variety of quartz. The grapes are hand-picked and vinified plot by plot separately in steel, followed by nine months of maturation without racking or fining. Unfiltered and unsulphurised, the wine may contain some natural carbonic acid, which disappears during decanting.

Medium golden yellow with delicate green reflections.
Nose
The aroma of the 2020 Chablis A l'Ouest from Domaine l'Enclos is intense and expressive. Pickled apples, apple sauce, oranges and orange zest combine with malty notes of cereals and dried pastries, oyster shell, ginger, lemongrass and lime blossom. A very open wine, which already points to a juicy palate with its natural style.
Palate
The palate is not only juicy, but also with animating taut acidity and lots of spice, you can literally bite this Burgundy. The cereal, malty notes are very present, as is the impression of freshly ground white pepper. The long finish is alive with saltiness and the citrus fruits of the nose, including the fine tartness of their zest. A Burgundy that loves the accompaniment of hearty cuisine with fruity accents. Exciting!
