The wines from the La Collina series by Francesco Cirelli come from organic contract farming on surrounding farms. For this Cerasuolo, the grapes are destemmed, followed by a 24-hour maceration in tanks. The must is then gently pressed and fermented spontaneously in stainless steel. After four months on the lees, it is bottled after a small addition of sulphur.

With full fruit ahead, it fulfils every expectation one may have of a top Cerasuolo without drifting into the category of seasonal article. Suitable for year-round enjoyment, it combines its high-performance fruit with subtle notes of kitchen herbs and mild spices, which the cherry doesn't care about at all.
Mouth
It flows unabashedly cherry-like into the throat until the fine tannins appear and contour it on the palate. They seem almost dusty in texture and enclose the sparkling fruit like jewels. Bone-dry with well-integrated acidity, the yeast ageing can also be felt haptically on the palate. TipTop all-rounder for everything you can eat out of your left hand.
