Color:
Strong straw yellow, bright and clear.
Nose:
The nose seems to come out of the examination book for Vernaccia. Notes of ripe pome fruits like yellow apples and pears mingle with herbaceous aromas of summer meadow, hay flowers and herbal tea and are tartly contoured by fine bitter almond aromas, broom and chestnuts.
Mouth:
The palate delivers what the nose promises. With an almost unusually bright fruit for Montenidoli, the opening of Montenidoli's 2012 Carato from 100% Vernaccia is juicy and joyful. Tartly underpinned by the usual nutty and bitter almond notes, it joins the jovial fruit and serious tart notes in a goblet, sketching with a steady hand the picture of an Italian white wine far from confected paths.
Food recommendations by Sebastian Bordthäuser:

(Vegetable & Vegetarian, pulses, fruiting vegetables (nightshade))
- Grilled razor clams with wild fennel pollen, young garlic and olive oil

- Braised rabbit in white wine with thyme, oregano and purple olives
(Wild, rabbits)
