For this wine from the Négoce series Petit Aigle Boris Champy acquired an Ecocert-certified organic Pinot Noir from the plots of Les Planchots and Les Gollardes, a high-altitude plot with shallow reddish-brown soils rich in stones in Savigny-les-Beaune. Boris Champy destemmed only 70 % of the grapes, so there was a proportion of whole bunches. However, due to the vintage in which there was Botryrtis, he de-stemmed the grapes completely, treated the styles with sulphur and formed a millefeuille from layers of de-stemmed grapes and raisins to ferment the grapes. He fermented spontaneously, extracted gently and aged the wine for ten to twelve months in tonneaux and bottled without filtration.

Nose
Boris Champys Petit Aigle Savigny-Les-Beaune 2021 is a spicy and herbaceous wine with a fresh blend of red and black berries, as well as some sour cherry, juniper and flowers. It appears just as transparent in the aroma as in the colour. There is hardly any extraction and little wood, but a lot of fruit, as befits the appellation.
Palate
On the palate the Savigny-les-Beaune also juicy and transparent with a mixture of red and dark berries and some sour cherry. The tannin is quite firm, the acidity agile. The body is lean, the aroma slightly earthy next to the fruit and a little reminiscent of Cointreau.
