Wine information
The Chardonnay of this cuvée comes from chalk soils with a clay layer from the Chapelle and Chaillois sites in Villenauxe-la-Grande. The yield was 60 hl/ha. The vines are around 40 years old and were ECOCERT certified in 2012. For the base wine, 100 % of Cœur de Cuvée were used. The fruit was from 2017 and after natural settling, the juice was fermented at 15 % in barrel, 35 % in demi-muid and 50 % in stainless steel tank and aged for months. The wine matured in bottle for 42 months. There was no dosage. The champagne was disgorged by hand.

Nose
With the bouquet of the Les Margannes In contrast to the younger Blanc de Blancs fleur de craie directly the distinguished of a more mature champagne that has also seen more wood. With all the freshness that the nose offers, one finds notes of acacia and its honey, of ripe stone and pome fruit, of lemon curd and a little brioche with hazelnut cream.
Palate
On the palate the Blanc de Blancs elegant and fine mousseux. It has volume and power, pressure and juiciness. This is a finesse-rich wine that plays between ripe aromas of pears, lemons and peaches, incorporates ginger and lemon peel, chalk and lime, but also almonds and nuts. The effect is as charming as it is complex, offering fullness and length and yet always remaining fresh and precise.
