Since its foundation, the winery has been in a constant state of change. For some years, Dominik Huber has been pursuing the vision to work completely without wood in the cellar. The hot, dry Priorat should thus be brought to more finesse and the already warm, powerful wines should be dressed with more freshness and finesse. The alcohol content of 13,5% Vol. is prescribed by the D.O. for a wine with designation of origin without hin. In 2017, the Carignan from the Arbossar site is 100% from the cement tank. Huber also follows the credo of "infusion rather than extraction", aiming to counteract the further release of colour, extract, tannin and intensity. The grapes come from 108-year-old vines and undergo whole cluster pressing after an early but physiologically ripe harvest. "Grappes entieres" is something Huber learned and adopted for himself in earlier years during his time with Tom Lubbe of Matassa. Oxidation is not really desired in the basket press. Fermentation lasts about 10 days before pressing with little pressure. Dominik Huber has a "strong vision of what Priorat should taste like". He and his team are always among the very first to harvest there, for which they were also ridiculed for a long time. However, today's success speaks for them and the path they have chosen.


Dark cherry red, bright reflections


The nose reminds me surprisingly of great amontillado sherry based on Palomino Fino with decent maturity. Licorice and violets, but also plenty of cassis and sour cherries. Unripe almonds and rosemary also make an appearance. The longer you stay with it, the greener tones come through. I don't perceive green as unripe, but rather vegetal. So does rubbed rubber, like you'd get from car tires (and I really like that tone in Mediterranean wines!!). Way too bright for a textbook Priorat. And the longer I smell it, the more I find Reinclaude and also sloe in the glass.


From the first sip, this elegance captivates you. Is this really Priorat? The wine suddenly seems light-fruited and cool. The Mediterranean nose is clearly confirmed. Seems refined at the first sips and supported by a fine tannin. A present acid structure makes the Carignan seem delicate and unending. Roasted pimentos de Padron also suddenly come to the fore. And also the characteristic tone of an Amontillado I feel here again.
One would hardly believe this finesse at first. The wine warms on the palate without question, but is always wrapped in a cool, silky robe. The absolute purist, pure Carignan, pure Mediterranean. The finish seems never-ending. This bright, clear tone literally nails itself.
2-3°C below the usual temperatures work wonders here. So please serve at 14°C rather than 18°C.
