Welschriesling from southern Styria grows predominantly on Opok soils. Opok is the predominant rock type in western and southern Styria. For the most part, Opok is based on consolidated sedimentary rocks such as marl, clay and silt.
In 2021, mature and crystal clear wines could be obtained from perfect harvest material. The vines are 10-50 years old. After spontaneous fermentation, the Tement winery allows all wines a longer storage on the fine lees. This Welschriesling is matured in steel tanks and is allowed to remain in contact with the yeast for 6-12 months, depending on the container.

Nose
The 2021 Welschriesling Opok presents itself extremely restrained, delicate and herbaceous. Its stony character dominates the picture. Plenty of garden herbs in the form of lemon balm, lemon thyme, sage and mint as well as parsley fit perfectly into the picture. The fruit is in the background. Yellow and green apples, especially their tart skin, lime and green papaya should be mentioned first. White currants and a hint of lychee are only secondarily perceptible. Fennel, a little savory and courgette round it off. It has a positively uncomplicated and extremely animating effect.
Palate
On the palate, it promptly shows that it fits exactly into this image from the first sip. The stony notes make it seem meagre and lean. I would classify it as almost salty. The fruit moves even further into the background on the palate and once again leaves the field to the herbs and some vegetal components. Acidity, body and finish are in a very harmonious construct. In the finish, it shines with a positive bitter tone in addition to the herbal spiciness. This is very stimulating to drink and expands its spectrum in food accompaniment.
