The Terrers Brut Nature embodies the purist philosophy of the house: zero dosage, extended lees ageing, organic viticulture. This uncompromising Brut Nature demonstrates what Cava can be when given time and respect. At 12% alcohol, the wine remains elegant and approachable – a statement against the overripeness of many modern sparkling wines.
Terroir & Origin
The vineyards lie in Penedès, the historic heart of Cava production south-west of Barcelona. Recaredo manages his parcels biodynamically on chalky soils that lend the wines their characteristic minerality. The Mediterranean climate with cool night temperatures preserves the freshness of the grapes. The name „Terrers“ – Catalan for soils – underscores the terroir commitment of this winery, which has produced exclusively Cava since 1924.
Grape Variety & Vinification
Xarel·lo forms the backbone of this cuvée, bringing structure, body and that spicy complexity which makes this autochthonous variety so valuable. Parellada contributes finesse and floral notes. The base wines are vinified separately, with the second fermentation taking place traditionally in the bottle. Crucial is the extended lees ageing of at least 30 months, which gives the wine depth and creamy texture. As a Brut Nature, the wine comes without any dosage – a commitment to fruit purity and artisanal craftsmanship.
Food Pairing Recommendations
The saline minerality and crisp acidity make this Cava the ideal companion for seafood, oysters and grilled prawns. It also harmonises beautifully with Jamón Ibérico, Manchego and other Spanish tapas. The complexity also complements sautéed mushrooms or risotto.
