The sensory journey of the 2019 Pinot Noir "P" begins with a ripe, engaging aromatic explosion on the nose. Notes of dark cherries go hand in hand with pickled plums, hints of leather, cedar and the exotic spices of cinnamon and clove. An unmistakable mineral component paired with wood notes adds structure and depth already in the bouquet.
Taste:
On the palate, it is taut, juicy and full on the palate. The balance of tannins and acidity is skilfully integrated and creates both maturity and challenge. A Pinot Noir that still retains a certain youthful freshness in the snapshot, but reveals its impressive capacity for maturity. It is an excellent companion to hearty meat dishes and unfolds its full flavour explosion in the cooler season.
Tasting tips:
Decantation is strongly recommended and the full aroma is best developed from a large Burgundy glass.
Alternative food recommendations:
Try walnut gnocchi with radish greens and a clementine and cardamom sauce, roast beef in a delicate horseradish sauce, thyme and lard potatoes, or a festive goose roulade with cranberries and pistachios, served with red cabbage and ricotta pockets.
