If you want to find Georges Laval's house in Cumières, you need precise directions. It lies in a nameless hollow way and has no sign on the door. What looks so insignificant is actually home to a unique treasure. The Lavals have been working organically in the vineyard since 1971. Vincent Laval has been running the winery since 1996 and has put it on a par with winemakers like Jacques Sélosse. Laval, that is 2.5 hectares of vineyards, which are cultivated with a small tractor and a horse and whose wines are pure and unadulterated, but shine with a style that is concisely their own. Vincent only makes five champagnes. The wines are always aged with little intervention in used barrels, which are topped up weekly. Nothing is added except a minimal amount of sulphur, nothing is fined or filtered. The champagnes mature in the cellar for 18 to 50 months.
