Nose
The 2015 "Les Hautes Chèvres" is one of those Blanc de Noirs Champagnes that immediately captivate the nose with their incredibly complex aromas. Small wild blueberries, wild raspberries, cranberries, roses, dried rose petals, intense rosemary and wild mint flow from the glass. This fruity, floral aroma is accompanied by earthy and smoky notes and a fragrance delicately reminiscent of cedar wood and incense.
Palate
On the palate, it presents itself as an excellent food companion with its pronounced creaminess and density. The long finish leaves clear smoky and peppery aromas, which are very nicely integrated into the fullness of the fruit and virtually lead us to the matching dishes.
To enhance its creaminess and richness, serve it a little warmer in a Burgundy glass.
