Wine information

This Gevrey-Chambertin comes from the La Justice site. It is located below the D974, which is why it would actually be counted among the less noteworthy sites, were it not for a fault of Comblanchien limestone that characterises this site. Above it is a sandy overlay that provides good drainage. Jérôme's vines here are 60 to 70 years old and of very good quality, so that he also uses them for the Selection massale uses. The vineyard work is organic, partly biodynamic and very labour-intensive. The Pinot Noir was partially de-stemmed and fermented in tanks, ageing took place for 24 months in used oak barrels with up to 25 % of new wood. Jérôme used only indigenous yeasts, there was no fining, no enzymes and only light filtration, and no, or if there was, then only very low doses of SO2. About 2,400 bottles were produced.

Nose

It is extremely interesting to compare Galeyrand's two different terroirs in Gevrey-Chambertin. La Justice presents itself subtle, finessed and elegant with fine wood and the finest vanilla as well as the notes of a cake batter coloured with cocoa, with plums and dark cherries, some wild berries and a hint of pepper.

Palate

On the palate, the Pinot Noir is elegant, powerful and deep with a masculine and at the same time very precise tannin typical of the appellation. The wine has a cool vein, initially dark fruity with a sweet core. Towards the finish, it becomes more tart and firm with a little salt and pepper, but also with an increasingly melting tannin that becomes finer, more elegant and also more sensual with air and warmth.
