Wine information
More than 15 hectares of vineyards around the villages of Chablis, La Chapelle and Beine form the basis for this Chablis. The soils are chalky with Kimmerdige and Portlandian limestone and the grapes are harvested by hand. After the harvest, the grapes are pressed directly and the must is fermented spontaneously in stainless steel fermenters. The Chablis is matured in classic perennial wooden barrels. After ageing, the wine is lightly filtered and sulphurised.

Nose
The Chablis has a subtle but charming scent of lemons with zest, a little salted lemon, iodine, lime and a hint of almonds and white flowers.
Mouth
On the palate, this is classic, fine, energetic Chablis with a shimmering minerality and an initially silky, then increasingly gripping acidity combined with a fine creaminess. At the same time, the aromas here are also characterised by slightly salty, citric notes and ripe stone fruit.
