About the wine:
This Champagne is the epitome of craftsmanship and respect for nature - a masterpiece born from Chardonnay vines that have thrived for more than 60 years on the single vineyard Les Hauts Nemery in Avize. Under the aegis of organic and biodynamic farming and with the support of horses, it presents itself as an expression of the purest form of wine. The base wine, spontaneously fermented in oak barrels and aged on its lees, is complemented by a 25 % ige top-up from a "Reserve Perpetual". The dosage is 3 g/l, categorised as Extra Brut, rounded off by a withdrawal on 17 May 2022.

Visual impression:
A medium straw yellow colours the glass, paired with a graceful mousseux that invites you to linger.

In the bouquet:
A round dance of olfactory experiences unfolds, led by lemon curd and lemon peel and underpinned by fresh apples and hints of white peach. Elements such as freshly baked bread, a hint of white nougat and nuts join in harmoniously. Added to this are hints of lime and chalky smoke, which complete a refreshing picture. This olfactory profile is rounded off by notes of lime blossom and acacia pollen.

Tasting:
On the palate, it is powerful, structured and concentrated. The Blanc de Blancs combines elements that lend both expressiveness and a cooling citrus note, complemented by ripe apples, pears and red berries. What distinguishes it, however, is its high energy and finesse. Slightly iodine and peppery, chalky and mineral, it is characterised by a balance between subtlety and intensity. A subtle elegant sweetness, paired with a fine astringency, completes the flavour profile of this wine.

Our food recommendations:
Pair this champagne with fried calamari marinated in lemon, olive oil and thyme or salt-crusted baked sea bass seasoned with lemon thyme. Stuffed tofu pockets with shitake rice are also an excellent accompaniment to this wine. Your taste buds will thank you!
