Nose
A juicy red apple floats through citrus groves that harbor limes, oranges and kumquats from the blossom, to the essential oils of the peels, to the fruit. Subtle nutty notes of green almonds, avocado and fresh hazelnuts are comfortingly echoed in this fruity binge of Chablis 1er Cru from one of Romain and Damien Bouchard's steepest slopes Vau de Vey. The fragrant fruit and subtle earthiness is herbaceously backed by aromas of bay leaf, mint and fennel greens.
Palate
On the palate, the 2017 Vau de Vey from Domaine de l'Enclos, along with its citrus-fresh aromatics, cuts a clean fine acid arc in the manner of a scissor cut. Thanks to its twelve months on the fine lees, the wine, for all its juiciness, has a pleasantly silky texture that caresses the palate and sets the bed for the Chablis' long, chalky finish. Welcome to the juice bar, which was made of pure lime.
