For this wine from the Négoce series Petit Aigle, Boris Champy acquired Ecocert certified organic Pinot Noir from the parcels Les Planchots and Les Gollardes, a high altitude parcel with shallow red-brown and stony soils in Savigny-les-Beaune. Boris Champy destemmed only 70 % of the grapes, so there was a proportion of whole clusters. He fermented spontaneously, extracted gently and aged the wine for ten to twelve months in tonneaux and bottled without filtration.

Nose
Boris Champys Petit Aigle Savigny-Les-Beaune 2020 is an herbal and fragrant wine with a dark fruit of crisp plums, sour cherries, some red currant and rose petals, rounded off by herbal notes, rapp and a touch of juniper.
Palate
On the palate the Savigny-Les-Beaune Accessible and juicy with a linear, clear and present acidity and a supple texture accompanied by a skilful use of wood. Even though the fruit seems ripe and round, there is a pleasantly cool, lively vein in this Pinot, which has a good draw and can easily be described as a Vin de soif passes through. But one should not underestimate it. The fine wood, the lively acidity, the ripe tannin and the use of raisins give it a good backbone for a long development.
