Wine information
The wine a minimum is a tribute to Jules Chauvet, the "inventor" of analytical tasting and the chemist who, among other things, worked on the elimination of sulfur in winemaking and is considered one of the forefathers of the vin naturel applies. Accordingly a minimum not sulphurized. The wine is a classic Passetoutgrain, i.e. a red wine from a mixed set of Pinot noir and Gamay rooted in the Grands Champs parcel in Gevrey-Chambertin, newly planted in 1965 in the shallow area. The area covers 0.6 hectares. The wine was aged in used barriques and barrels.

Nose
The 2018s a minima Combines in the attack a breath of salmiakpastillen with dark as well as red berry fruit, sour cherries and black cherries. With air then the notes of fresh yeast, a little wood, strawberry compote and plums predominate.
Palate
On the palate the Passetoutgrain an irrepressible juiciness and freshness. The dark berry dominates with plums, dark cherries and sour cherries, which in combination with further flavours even remind a little of the Lambic Kriek of the Brussels Brasserie Cantillon. At the same time, the wine has an excellent length. It is open, inviting and directly present, vibrantly alive and full of tension.
