Nose
The 2015 Saint Aubin 1er Cru "Sur le Sentier du Clou" is still hiding behind a curtain of stones and cool breeze. It needs the carafe to reveal itself, only then do aromas of apricot, quince, honeydew melon, mango and orange flesh cautiously flow out of the glass. Never superficially fruity, but despite the intensity fine and immensely precise. The longer it is opened the more clearly freshly stirred yeast, white bread crust, resin and some wood smoke join in.
Palate
On the palate, the 2015 Saint Aubin 1er Cru "Sur le Sentier du Clou" feels pleasantly attacked by its pronounced spiciness and intense salinity. Its fine phenols give it tension and expression, its juicy fruit remains rather in the background in its youthful stage. Opened in the carafe, it can be forgotten for a few days, the storage of a few additional years will suit it excellently. The impatient one does well to serve it caraffed to puristic dishes and to fish and seafood!
Recommendation
Be sure to decant and don't drink it too cold, a few days of opening will make it win.
