Nose
Herbaceous with ethereal notes of white pepper, citrus peel, wet stones and blackboard chalk form the heart notes, which are founded in the base of melted butter, light tobacco and bumped shells. Purist and unadorned.
Mouth
With vertical acidity, the 2017 En Remilly Saint-Aubin 1er Cru from Domaine Derain shows sparse on the palate with little meat on the ribs. It shines with its natural, very focused style that makes it rush sinewily and tightly across the palate. The wine's aromatics are stripped down to the essentials, the zesty acidic nerve cloaked in saline minerality reminiscent of oyster shells. With herbaceous extract, some liquorice and a delicate aniseed note in the cool finish.
