Nose
The nose quickly identifies Kühling-Gillot's 2018 Hipping as a child of the Red Slope. Yellow-fruited with notes of red peach and white pepper, the fear basket is bundled with citrus oils and underpinned by expressive herbal spice. Fresh overall with mineral depth and fulminant extract. Meanwhile, please use big glasses - but better wait five years.
Mouth
Pressurized and powerful on the palate, it packs a punch like Klitschko. Slightly oily with good use of wood, it is contoured by the pithy acidity, embedded in a coherent overall concept. With a proper vibration and a stately bass on the palate, the aroma controls are at maximum, the fruit in the extract, the acidity pulsating and underpinned with cool minerality, which already gives it a rapid drinking flow, although the hipping explicitly asks for a few years of bottle ripening.
