Color:

Dark purple with violet reflections and black core.

Nose:

Tobacco, air-dried bacon and some cedar dominate the first nose of the 2010 Gombaude-Guillot Pomerol. After careful decanting, it gradually reveals its fruity side: crème de mure, blueberries, black cherries and cassis fill the olfactory fruit basket. Spicy notes of allspice, long pepper, black olives and bay leaf follow. A dense Pomerol which, at this youthful stage, is happy about every ounce of air.

Mouth:

On the palate, the wine is initially fruity with lots of meat and juicy texture. The fruit dominates the nose, plums and black cherries, until the ethereal balsamic notes of spices such as pepper, mace and allspice directly penetrate. The tannins are ripe, tightly woven and almost fluffy like velvet. The acidity is well integrated and takes the wine into a lengthy finish.

Food recommendations by Sebastian Bordthäuser:

  • Jackfruit curry with smoked tamarind (vegan)
(Special dishes, curry dishes, Vegan dishes)
  • Fat tuna belly with soy onions and red miso
    (Fish, tuna, mackerel, onion vegetables)
  • Sweet soy lacquered flank steak with salty plums
    (Meat, beefstone fruit)
