Nose
The nose of this wine tells stories of heaven and earth, of fruit and soil. Its fruity components are set and yellow-fleshed. Quince, sultanas and a yellow mealy apple kick things off, with figs and dried apricots following on their heels. Depth and spice are introduced by the earthy scents of beechnut and walnut, as well as truffle butter, onion skin and a hint of Montelimar nougat. Changing in many ways, arousing curiosity and yet resting in itself, this Champagne has charismatic charisma.
Palate
The Mycorhize Grand Cru Extra Brut from De Sousa et Fils is just as well-balanced as the promise of its nose announced. Fine bubbly and playful, it takes even the last corner of the palate. Its yellow ripe fruit is tickled by refreshing acidity and carried by a chalky, yet creamy texture. Aroma-dense and diverse, yet not effervescent, this Blanc de Blancs from 100% Chardonnay finds itself in a perpetual echo of the spice of almond speculoos and the sparseness of stony minerality.
