The A L'Ouest is named after the western orientation of the vineyard parcel with 40-year-old vines. The vines grow on a plateau of Portland marl with a high limestone content and Cirtrin, a macrocrystalline variety of quartz. The grapes are hand-picked and vinified plot by plot separately in steel, followed by nine months of maturation without racking or fining. Unfiltered and unsulphurised, the wine may contain some natural carbon dioxide, which disappears when the wine is decanted.

Strong straw yellow, radiant and clear.
Nose
On the nose, the Bauart is unsulphured with the typical aromas of grain, mash and brown interface of the oxidised apple. This is joined by ethereal citrus notes of lemon oil, grapefruit zest, green mandarin and papaya, underpinned by mineral notes of pebbles, oyster shells and wet chalk. Melissa and white pepper bring it all home together.
Mouth
On the palate, the 2019 A l'Ouest from Domaine L'Enclos is powerful with pulsating minerality and immense tension. The mature style of the house finds its structural counterpart here: chalky and firm with creamy melting, the fruit floats over this monolith like a flying carpet, lined with delicate phenolic and citrus ornate. Animatingly tart with clear grapefruit notes, it flows salty fresh into the long finish.
