Wine information

For this wine, Boris Champy used Chardonnay from the Montagne de Cras vineyard in Nantoux. The plot is located in the Hautes-Côtes de Beaune at an altitude of 382 metres. The soils are interspersed with pebbles, limestone, calcareous marl and clay. The four hectares of the vineyard are divided into three hectares of vines and one hectare of compensation area with scree, hedges and fruit trees, with numerous orchids and rare tree species in the grassy meadows. The vines were planted very densely with 10,000 vines per hectare and trained in Guyot and Lyra. The spontaneously fermented wine was aged for twelve months in Pièces aged on the lees with 15 % of new wood and 35 % of second growth with occasional batonnage.

Intense straw yellow with a light green reflex

Nose

Boris Champys 2021s Hautes-Côtes de Beaune "Montagne 382" is straight and cool with many different citric notes from lime to salt lemon to kumquat peel and orange pips. There is also some green pineapple and oak wood.

Palate

The wine has a striking acidity structure. Here too, the focus is on the crisp, bright citrus fruit. A vibrant minerality and clear tension pervade the Chardonnay, which remains taut until the finish.
