Nose
With the bright freshness of citrus and herbs, Bonnet-Ponson's Seconde Nature Brut Nature is aromatically reminiscent of a gimlet. Lime juice and candied lemon zest meet notes of juniper and coriander seed. A little chervil, cardamom and watercress contribute herbal spice while in the background a yeast dough goes calmly before it is plaited into the oven.
Palate
On the palate, this unsulphured 2017 cuvée of Pinot Noir, Chardonnay and Pinot Meunier hits the mark with impressive precision. With a fine, lively perlage, the yellow-fleshed fruit tickles the palate as if by sherbet powder. Extract-strong and at the same time drawn out with a steeled body, the citrusy acidity in the attack reveals a symbol of what has made champagne production the supreme discipline among winemakers.
