An absolute speciality is the perfectionist thought of Fernando Remirez de Ganuzo. He uses only the shoulders of the grapes from the Reserva quality level onwards. The tips of the grapes go into a young wine, which he markets mainly locally. The shoulders of the grapes deliver more fruit concentration and the higher potential for elegant, persistent wines.
