Description
Brilliantly combined, the cuvée of 45% Pinot Noir, 40% Chardonnay and 15% Meunier makes its greatest appearance. They allow this noble bottle of champagne, selected and made with the utmost care, without the addition of extra sulphur in the wooden barrel. It is highlighted by the exclusive production of only 1,000 bottles in August 2021.
Colour and appearance
The white gold glows powerfully and gives it an ultra-fine and vibrant sparkle, a feast for the eyes and the senses.
Nose
From the very first breath, the 2016 Seconde Nature Millesime Chamery Premier Cru takes you on a journey full of selected aromas. The scents of citrus fruits, including lemon, lime and kumquat, mingle with the wildness of tarragon, mint and a hint of sage. All this comes across as subtle yet powerful in its nuances. The fragrance of this masterpiece opens exceptionally well with aeration to highlight subtle tobacco notes as well as white bread crust and freshly baked yeast plait.
Palate
The tasting reveals itself as a powerful experience on the tongue. The fine sparkle of the carbonic acid, together with the striking saltiness, make inhalation an irresistible stimulus. Fullness is added by notes of vineyard peach and mirabelle plum, which add juice, making this champagne a must-try culinary experience. Praise is due to this master-class champagne.
Food recommendations
As an accompaniment to fine food, Seconde Nature'16 is excellent. Try truffle gnocchi served with a zesty lemon sauce and fresh thyme, or try oysters with dried ham. For the main meal, a tender herb-crusted veal fillet served with Tarragon watercress, carrots and crispy potato rösti would be an ideal accompaniment.
