Thirteen years on the lees, hand-disgorged — Recaredo, Gramona & Co. from Catalonia.  ‌ ‌ ‌ ‌ ‌ ‌ ‌ ‌
The Recaredo team in front of the riddling racks and disgorgement equipment, vineyards near Sant Sadurní

Hello,

We have brought you four Cava houses today. At home in a biblical landscape of white limestone and blazing light, crowned by the rocky pinnacles of Montserrat. Here, sparkling wine is made with a devotion bordering on the religious: cathedral-like Brut Nature, estate-owned vines, and ageing times that read like a vow – years, decades. Sounds like a great deal of piety. Above all, it makes for tremendous pleasure!

From the 15 € bottle for a Wednesday evening to single-vineyard Cava:

Vins El Cep · Alta Alella · Gramona · Recaredo

The Two Cases

For those who prefer not to choose individually: two cases, six bottles each – one up to 25 €, one up to 99 € per wine.

Vins El Cep

Four families in the upper Penedès, whose vines date back to 1448 – and who bottled Spain's first biodynamic Cava in 2003.

L’Alzinar Brut Nature Reserva 2022

Xarel·lo, Macabeu, Parellada · Penedès · ca. 15 €

L'Alzinar Brut Nature Reserva 2022

The entry-level wine that shows exactly what this is all about: 30 months on the lees, zero dosage, dry to the very core. Green apple and bread crust, a hint of fennel on the finish. The Cava for a Wednesday that feels like a Friday.

Clos Gelida 4 Heretats Gran Reserva 2019

Xarel·lo, Macabeu · Penedès · ca. 19 €

Clos Gelida 4 Heretats Gran Reserva 2019

From old vineyard sites, over 60 months on the lees – more than twice as long as the L’Alzinar. Freshly baked white bread and candied lemon, creamy mousse, a long finish. The Cava with which an evening begins and refuses to end.

CLAROR Can Prats Brut Nature 2015

Xarel·lo, Macabeu · Penedès · ca. 49 €

CLAROR Can Prats Brut Nature 2015

A single parcel, ten years in the making. Citrus and almond, ripe quince, a whisper of camomile. The mousse has grown fine, almost creamy. A table Cava for poultry or aged hard cheese.

Alta Alella

Two kilometres from the Mediterranean, fifteen from Barcelona's Ramblas – vine terraces in a natural park, farmed organically by the second generation.

Mirgin Reserva Brut Nature 2021

Xarel·lo · Alella · ca. 18 €

Mirgin Reserva Brut Nature 2021

Pure Xarel·lo from vines above the sea, 18 months on the lees. Sea salt and yellow apple, with wild fennel alongside. The vines stand two kilometres from the water, and that saline pull on the palate is no coincidence.

Mirgin Rosé Reserva Brut Nature 2022

Mourvèdre · Alella · ca. 18 €

Mirgin Rosé Reserva Brut Nature 2022

A rosé Cava from pure Mourvèdre, known in Spain as Monastrell. Rarely done this way – most producers use Pinot for rosé sparkling wine. Delicate salmon pink, strawberry and raspberry, with pomegranate and a thread of herbs behind. The aperitif for the first warm evening on the balcony.

Mirgin Opus Vallcirera 2020

Chardonnay, Xarel·lo · Paratge Qualificat · ca. 41 €

Mirgin Opus Vallcirera Brut Nature 2020

Cava from a classified single vineyard, Spain's answer to the Grand Cru concept. Quince and brioche, vibrant acidity, a long, lingering finish. Calls for fat and salt: monkfish with brown butter.

Gramona

Based in Sant Sadurní d’Anoia since 1850 – one of Spain's most respected houses, renowned for lees ageing measured in decades.

La Cuvée Brut 2019

Xarel·lo, Macabeu · Penedès · ca. 23 €

Gramona La Cuvée Brut 2019

Gramona's calling card, grown biodynamically, a Brut with minimal dosage. Stone fruit and white blossom, creamy mousse, a chalky note on the finish. The Cava with which one first gets to know Gramona.

III Lustros Brut Nature 2015

Xarel·lo, Macabeu · Penedès · ca. 49 €

Gramona III Lustros Brut Nature 2015

The name pays homage to the house's tradition. This vintage aged for around seven years on the lees, without dosage. Toasted nuts, dried apricot, a savoury ripeness reminiscent of fenugreek. A sparkling wine for the table – treat it as you would a great white wine.

Xarel·lo, Macabeu · Penedès · ca. 25 €

Recaredo Relats de Viticultors Brut Nature 2020

The entry point into Recaredo's world, and already here disgorged by hand. Toasted almond and citrus zest, with a chalky, powdery quality on the palate behind. Austere and precise: Recaredo never adds dosage, and here you understand why. If you want to know this house, start with this bottle.

Turó d’en Mota Brut Nature 2011

100% Xarel·lo · Single Vineyard · ca. 175 €

And if you ask me: my own house wine from this selection is the Mirgin Reserva at 18 €. I have it in the fridge more often than anything else – and on a warm evening it's always the first to disappear.

Add directly to your basket:

Here's how it works: one click on the button adds all the bottles to your basket at once. From there you can swap, remove or combine individual wines. It's a suggestion, not a fixed set.

P.S.: Sparkling wine does not belong in a flute – it compresses the aromas. These Cavas show at their finest in the Zalto Universal, which gives their depth the space it deserves.
