Thomas e sua moglie Sylvie coltivano circa 13 ettari nelle denominazioni di Chassagne-Montrachet, Puligny-Montrachet e B\u00e2tard-Montrachet, Maranges, Santenay, Saint-Aubin e Beaune. I Morey rappresentano la 10a generazione di viticoltori di Chassagne. Nel 2006 hanno deciso di mettersi in proprio. Nel 2014 hanno deciso di far certificare l'azienda come biologica. Thomas pu\u00f2 lavorare in gran parte con le vecchie vigne degli anni '50 e '60. Le nuove viti vengono piantate da selezioni massali di vecchie viti.
