Si tratta di un progetto N\u00e9gociant in cui i viticoltori sono passati alla coltivazione biologica e poi biodinamica. Nel frattempo, i vigneti sono stati <em>Ecocert<\/em> certificato. Con l'annata 2018, ci sono due <em>Champagne<\/em> del vigneto Les Semblables. Uno si chiama <em>Australe<\/em> e comprende le parcelle esposte a sud, questa si chiama <em>Bor\u00e9al<\/em> e comprende le parcelle pi\u00f9 fresche esposte a nord. Il <em>Champagne<\/em> \u00e8 un Pinot Nero monovitigno proveniente da un sito altamente calcareo con argilla e terriccio vicino a Buxi\u00e8res-sur-Arce. Le uve intere sono state pigiate, fermentate spontaneamente, maturate in botti usate da 350 e 500 litri e poi affinate sui lieviti per 15 mesi. Il <em>Natura Brut<\/em> \u00e8 stato sboccato il 18 ottobre 2020.<\/p>\n<\/div>\n<h4>Colore<\/h4>\n<div>\n<p>Rosa pallido come un \u0152il de Perdrix, perlage continuo<\/p>\n<\/div>\n<h4>Naso<\/h4>\n<div>\n<p>Che il <em>Sembiables Bor\u00e9al<\/em> da uno dei vigneti pi\u00f9 freschi della C\u00f4te des Bar, presenta aromi freschi, chiari e scuri di mirtilli e pompelmo, ribes rosso, mela rossa e pietra fresca e umida. Questo vibra gi\u00e0 nella fragranza ed \u00e8 completato da una nota di mandorle, fiori di violetta e pasta di pane fresca.<\/p>\n<\/div>\n<h4>Palato<\/h4>\n<div>\n<p>Al palato, il <em>Sembiables Bor\u00e9al<\/em> Un riuscito equilibrio tra rosso e giallo, frutta sempre croccante, leggere note erbacee e di lime e un po' di tabacco. \u00c8 un Blanc de Noir senza compromessi che mostra una piacevole pressione al palato. Da questo punto di vista, \u00e8 ancora pi\u00f9 sottile del <em>Champagne Chardonnay<\/em> della casa.
