Noch etwas verschlossen, aber aromatisch sehr attraktiv und ausgewogen \u2013 das feine, nie aufdringliche Holz bleibt elegant im Hintergrund.<\/dd>\n<dt>Palato<\/dt>\n<dd>Aktuell zeigen sich die <strong>Tannini<\/strong> noch etwas belegend und der Wein wirkt recht streng \u2013 auf angenehme Weise. Klar, aufger\u00e4umt und fest bleibt dieser Pinot Noir vom ersten Eindruck bis ins <strong>recht lange Finale<\/strong>. Er braucht noch Zeit; Geduld wird hier belohnt.<\/dd>\n<dt>Partenza<\/dt>\n<dd>Straff, geradlinig und <strong>lungo<\/strong> \u2013 ein Abgang, der vom Versprechen k\u00fcnftiger F\u00fclle erz\u00e4hlt.<\/dd>\n<dt>Terroir e origine<\/dt>\n<dd>Der Grand Clos Rousseau ist zusammen mit dem Petit Clos Rousseau und Les Fourneaux Teil des rund 24 Hektar umfassenden <strong>Clos Rousseau<\/strong> und liegt auf der <strong>s\u00fcdlichen Seite von Santenay<\/strong> in Richtung Maranges \u2013 dem k\u00fchleren, finessenreichen Rand der C\u00f4te de Beaune.<\/dd>\n<dt>Vitigno e vinificazione<\/dt>\n<dd>Reiner <strong>Pinot Nero<\/strong>. Die weitgehend entrappten Trauben verg\u00e4ren mit <strong>lieviti indigeni<\/strong> in einer Kombination aus neutralem Fass und Tank; die malolaktische G\u00e4rung l\u00e4uft nat\u00fcrlich ab. Der <strong>Neuholzanteil liegt bei etwa 20&nbsp;%<\/strong>, geschwefelt wird erst im letzten halben Fassjahr in minimalen Dosen \u2013 insgesamt nie mehr als 35&nbsp;mg\/l.<\/dd>\n<dt>Abbinamenti Gastronomici<\/dt>\n<dd>A <strong>Petto d'anatra con ciliegie<\/strong>, <strong>Sella di cervo<\/strong>, <strong>Coq au vin<\/strong> o un forte <strong>Rag\u00f9 di funghi<\/strong>. Anche <strong>Epoche<\/strong> o <strong>Comt\u00e9<\/strong> sind gute Tischgenossen.<\/dd>\n<dt>Caratteristiche speciali<\/dt>\n<dd>Thomas Morey ist seit 2017 <strong>certificato biologico<\/strong> und arbeitet mit maximal 35&nbsp;mg\/l Schwefel im fertigen Wein \u2013 auf Sch\u00f6nung und Filtration verzichtet er bei seinen Rotweinen komplett. Dass die Domaine de la Roman\u00e9e-Conti ihm die Pflege ihrer Reben im <strong>Le Montrachet<\/strong> anvertraut, sagt viel \u00fcber das handwerkliche Niveau, das auch diesem Santenay zugrunde liegt.
