Der Verzicht auf zugesetzten Schwefel schenkt dem Wein eine puristische, unverf\u00e4lschte Frucht und eine faszinierende, unmaskierte Struktur. Am Gaumen zeigt er sich mit seidenem Zug, feiner Rasse und jener fokussierten Spannung, die moderne, handwerklich gewonnene Burgunder der C\u00f4te de Beaune heute auszeichnet.<\/dd>\n<dt>Terroir e origine<\/dt>\n<dd>Die begehrte Premier-Cru-Lage Santenots liegt zwar auf dem Gemeindegebiet von Meursault, ist aber aufgrund ihres kalk- und lehmreichen Bodens historisch f\u00fcr rotfruchtige, hochelegante Rotweine ber\u00fchmt und wird als Volnay klassifiziert. Pierre-Henri Rougeot arbeitet auf den 12,6 Hektar des Familienweinguts nach biologischen und biodynamischen Prinzipien (seit 2020 bio-zertifiziert, Demeter-Umstellung l\u00e4uft), um den B\u00f6den die maximale Ausdruckskraft zur\u00fcckzugeben.<\/dd>\n<dt>Vitigno e vinificazione<\/dt>\n<dd>100 % Pinot Noir. Pierre-Henri Rougeot setzt in den historischen Kellern aus dem 18.
