La vendemmia si \u00e8 svolta tra il 12 e il 24 settembre 2009.<\/p>\n<\/div>\n<div>\n<p>Il mosto viene fatto fermentare in vasche di granito. La pressatura con i piedi assicura una bassa pressione sulle bucce e sui vinaccioli. La pressatura \u00e8 seguita dalla fermentazione malolattica e dal successivo affinamento sui lieviti.<\/p>\n<\/div>\n<div>\n<p>La sboccatura \u00e8 avvenuta dopo 67 mesi.<\/p>\n<\/div>\n<h4>Colore<\/h4>\n<div>\n<p>Colore porpora denso, mousseux di lunga durata e perlage finissimo<\/p>\n<\/div>\n<h4>Naso<\/h4>\n<div>\n<p>Il naso \u00e8 abbondantemente porzionato, fruttato ed espansivo. Mora, mirtillo e sambuco si uniscono. Le ciliegie dolci non hanno nulla da invidiare alle ciliegie acide e alle more. Un accenno di mirtillo rosso essiccato e di barbabietola fornisce un sapore terroso. Un sottofondo eterico. Ha un effetto fresco e rinfrescante. Una nota marittima e pietrosa si sviluppa al di sotto. Questo apporta ulteriore freschezza e leggerezza. Mostra allo stesso tempo spruzzi di mare e guscio d'ostrica. Estremamente insolito per la sua colorazione.<\/p>\n<\/div>\n<h4>Palato<\/h4>\n<div>\n<p>Al palato, colpisce davvero nel segno. Tutte le aspettative sono superate. Il frutto \u00e8 concentrato in eleganza e leggerezza. Scuro senza dubbio, ma caratterizzato da elementi freschi e ripetutamente accentuati da picchi di acidit\u00e0. Il mousseux gli conferisce consistenza senza diventare troppo cremoso. L'acido carbonico lo caratterizza immensamente. Teso, fresco e pieno di finezza.
