Mais la v\u00e9ritable r\u00e9volution est venue plus tard. <strong>Hans Zillinger s'est converti \u00e0 l'agriculture biologique en 1984<\/strong> \u2013 \u00e0 une \u00e9poque o\u00f9 le vin autrichien \u00e9tait encore synonyme de production de masse frelat\u00e9e, deux ans avant le scandale du di\u00e9thyl\u00e8ne glycol qui a secou\u00e9 l'industrie. Johannes, qui a repris en 2012, poursuit la philosophie en tant que troisi\u00e8me g\u00e9n\u00e9ration : certification Demeter depuis son arriv\u00e9e, <strong>herbes entre les rangs de vignes<\/strong> pour des tisanes et extraits maison, porcs Kunekune et poules qui ameublissent et enrichissent le sol.<\/p>\n<p>Les 23 hectares sont situ\u00e9s sur des <strong>sols calcaires et gr\u00e9seux<\/strong> autour du petit village de Velm-G\u00f6tzendorf dans le sud-est du Weinviertel. 70 pour cent sont plant\u00e9s de c\u00e9pages blancs \u2013 Gr\u00fcner Veltliner, Riesling, Sauvignon Blanc, Welschriesling, Muskateller. Sur les versants est des vignobles, Johannes plante des arbres et des arbustes comme amortisseurs climatiques naturels.<\/p>\n<h2>R\u00e9volution en f\u00fbt Solera<\/h2>\n<p>La ligne <a href=\"https:\/\/www.lebendigeweine.de\/fr\/jz-revolution-white-solera-n-v-nv-johannes-zillinger\/\" title=\"JZ Revolution White Solera kaufen\">JZ. Revolution<\/a> fait du nom un programme. Au lieu de produire des vins de mill\u00e9sime, Johannes suit ici le principe Solera, comme on le conna\u00eet du X\u00e9r\u00e8s : chaque ann\u00e9e, une partie est pr\u00e9lev\u00e9e et mise en bouteille, le reste est compl\u00e9t\u00e9 avec du vin nouveau. <strong>Au fil des ann\u00e9es, les mill\u00e9simes fusionnent<\/strong> en un vin qui exprime le terroir mais lisse les caprices m\u00e9t\u00e9orologiques des ann\u00e9es individuelles. Blanc, ros\u00e9, rouge \u2013 tous trois vieillissent en amphores, tous non filtr\u00e9s et non coll\u00e9s, avec un soufrage minimal inf\u00e9rieur \u00e0 30 mg\/L.<\/p>\n<p>Quand Hans Zillinger s'est converti \u00e0 l'agriculture biologique en 1984, il y avait \u00e0 peine de mod\u00e8les en Autriche. Des vins l\u00e9gers avec environ <strong>11,5 pour cent d'alcool<\/strong>, courte mac\u00e9ration sur calcaire-gr\u00e8s, introduction parfaite au monde du vin naturel. Ils montrent que biodynamique ne signifie pas difficile ou exigeant.<\/p>\n<p>Reflexion K r\u00e9unit les parcelles pr\u00e9f\u00e9r\u00e9es du grand-p\u00e8re, du p\u00e8re et de Johannes en une <strong>cuv\u00e9e de trois g\u00e9n\u00e9rations<\/strong>. Chaque g\u00e9n\u00e9ration apporte sa contribution, la vinification se fait selon diff\u00e9rentes m\u00e9thodes \u2013 le r\u00e9sultat est plus que la somme de ses parties. Light wines with around <strong>11.5 per cent alcohol<\/strong>, short skin contact time on limestone-sandstone, the perfect introduction to the world of natural wine. They show that biodynamic does not have to mean difficult or demanding.\n\nReflexion K unites the favourite parcels of grandfather, father and Johannes into a <strong>three-generation cuv\u00e9e<\/strong>. Each generation contributes its part, vinification is carried out using different methods \u2013 the result is more than the sum of its parts. Parcellaire comes from the coolest vineyard sites, close to forest and north-east facing, where the grapes ripen slowly and retain acidity.\n\nAt the top stands NUMEN, Latin for the spirit or divine power of a place. Mais la v\u00e9ritable r\u00e9volution est venue plus tard. <strong>Hans Zillinger s'est converti \u00e0 l'agriculture biologique en 1984<\/strong> \u2013 \u00e0 une \u00e9poque o\u00f9 le vin autrichien \u00e9tait encore synonyme de production de masse frelat\u00e9e, deux ans avant le scandale du di\u00e9thyl\u00e8ne glycol qui a secou\u00e9 l'industrie.
