Les Houill\u00e8res wurde 1989 mit einer S\u00e9lection massale bepflanzt. Die Parzelle wird sehr fr\u00fch reif und entsprechend fast immer als erste gelesen. Es sind flache und tiefgr\u00fcndige B\u00f6den, die aus einem roten Ton-Kalk-Gemisch bestehen Man findet sie als Verl\u00e4ngerung der ber\u00fchmten Lage Les Enceign\u00e8res auf dem R\u00fccken des H\u00fcgels. Die G\u00e4rung erfolgt mit indigenen Hefen in einer Kombination aus neutralem Fass und Tank. Die malolaktische G\u00e4rung l\u00e4uft auf nat\u00fcrliche Weise ab, und der Wein verbleibt auf seiner Hefe ohne jegliche B\u00e2tonnage. Der Neuholzanteil betr\u00e4gt rund 20\u202f%. Geschwefelt wird erst im letzten halben Jahr im Fass, und zwar mehrfach mit minimalen Dosen, sodass der Wein insgesamt nie auf mehr als 35 mg\/l kommt.<\/p>\n<\/div>\n<h4>Couleur<\/h4>\n<div>\n<p>jaune paille moyen<\/p>\n<\/div>\n<h4>Nez<\/h4>\n<div>\n<p>Thomas Moreys <em>Chassagne-Montrachet 2019 <\/em>est un Chardonnay fruit\u00e9, brillant et ouvert qui montre beaucoup de fruits \u00e0 p\u00e9pins et \u00e0 noyau et devient plus pr\u00e9cis et radieux avec l'air. Il r\u00e9v\u00e8le ensuite des notes distinctes d'agrumes et de pierre, de frottement de pamplemousse et d'herbes. Ici, on trouve moins de r\u00e9duction que dans le <em>Bourgogne Chardonnay<\/em> et moins cr\u00e9meux-siliceux que dans la <em>Saint-Aubin<\/em>. Le site <em>Chassagne-Montrachet <\/em>se situe plut\u00f4t au milieu.<\/p>\n<\/div>\n<h4>Palais<\/h4>\n<div>\n<p>En bouche, le <em>Chassagne-Montrachet <\/em>une image cristalline, tr\u00e8s pure et fine de fruits \u00e9clatants, mais directement encadr\u00e9e par une acidit\u00e9 vive, des notes d'agrumes, d'herbes et un peu de geni\u00e8vre. Le vin se pr\u00e9sente tr\u00e8s lin\u00e9aire avec un agr\u00e9able mordant et une fine min\u00e9ralit\u00e9. En bouche, il est beaucoup moins fruit\u00e9 qu'au nez et montre davantage son c\u00f4t\u00e9 frais.
