Die erste Parzelle, die 1989 mit einer S\u00e9lection massale alter Rebst\u00f6cke des Gutes bepflanzt wurde, befindet sich auf flachen B\u00f6den mit braunem Lehm. Die zweite, 2004 mit einer Klon-Selektion bepflanzt, befindet sich auf leicht abfallenden, sehr steinigen B\u00f6den in der Lage \u00bbLes Pierres\u00ab. Die G\u00e4rung erfolgt mit indigenen Hefen in einer Kombination aus neutralem Fass und Tank. Die malolaktische G\u00e4rung l\u00e4uft auf nat\u00fcrliche Weise ab, und der Wein verbleibt auf seiner Hefe ohne jegliche B\u00e2tonnage. Der Neuholzanteil betr\u00e4gt rund 20\u202f%. Geschwefelt wird erst im letzten halben Jahr im Fass, und zwar mehrfach mit minimalen Dosen, sodass der Wein insgesamt nie auf mehr als 35 mg\/l kommt.<\/div>\n<div>\n<h4>Couleur<\/h4>\n<\/div>\n<div>jaune paille moyen<\/div>\n<div>\n<h4>Nez<\/h4>\n<\/div>\n<div>Thomas Moreys <em>Bourgogne Chardonnay<\/em> constitue une excellente introduction au portefeuille du viticulteur. Directement, on sait o\u00f9 le li\u00e8vre court. Le citron vert et l'allumette sont en jeu ici, un agrume brillant et un l\u00e9ger fruit exotique, en plus d'un peu de fum\u00e9e, de noisette et de ch\u00eane. Ce qui est merveilleux, c'est que, d\u00e9j\u00e0 ici, tous les \u00e9l\u00e9ments s'accordent brillamment et qu'aucun ne se distingue. La r\u00e9duction est pr\u00e9sente, mais mod\u00e9r\u00e9e, le fruit semble, selon le mill\u00e9sime, m\u00fbr, mais clair et frais, le bois forme un cadre et une base, mais pas plus. Cela vous donne envie d'en avoir plus.<\/div>\n<div>\n<h4>Palais<\/h4>\n<\/div>\n<div>En bouche, le vin offre une fra\u00eecheur et une onctuosit\u00e9 presque inattendues, comme une glace \u00e0 la cr\u00e8me de pop-corn qui fond lentement sur la langue, avec des fruits jaunes et un peu de citron. Le site <em>Bourgogne blanc<\/em> offre une exp\u00e9rience sensuelle, combinant des notes d'ananas, de citron, de lemon curd, de beurre fondu, de noisettes et de ma\u00efs avec du citron vert et du graphite. La texture soyeuse est accompagn\u00e9e d'une acidit\u00e9 structurante, d'une l\u00e9g\u00e8re min\u00e9ralit\u00e9 et de notes acidul\u00e9es en finale.
