Il provient des vignobles La Emilia, La Huelga, Astrales, Jaime et Sandelaisa \u00e0 Sotillo de la Ribera. Les vignobles se situent entre 830 et 850 m\u00e8tres d'altitude et les vignes sont enracin\u00e9es dans des sols marno-calcaires et surtout argileux. Apr\u00e8s une mac\u00e9ration pr\u00e9fermentaire \u00e0 froid, les raisins ont \u00e9t\u00e9 \u00e9grapp\u00e9s, ont ferment\u00e9 spontan\u00e9ment et avec le moins d'extraction possible dans une cuve en ciment et ont \u00e9t\u00e9 \u00e9lev\u00e9s pendant plus de cinq mois.<\/p>\n<\/div>\n<h4>Couleur<\/h4>\n<div>\n<p>violet frais<\/p>\n<\/div>\n<h4>Nez<\/h4>\n<div>\n<p>Le site <em>Flores<\/em> <em>de Callejo<\/em> est en effet un vin au parfum de fleurs, qui rappelle la violette. Puis viennent les cerises noires et les airelles, un peu de betterave rouge et de th\u00e9 noir, ainsi qu'un soup\u00e7on de vinaigre balsamique.<\/p>\n<\/div>\n<h4>Palais<\/h4>\n<div>\n<p>En bouche, le Tinto Fino a.k.a. Tempranillo est pur et authentique avec un fruit noir juteux et croquant, quelques touches de cannelle et une acidit\u00e9 fra\u00eeche.
