La fermentazione spontanea con lieviti selvatici \u00e8 lo standard, la fermentazione malolattica viene evitata, il dosaggio ridotto al minimo.\n\n<h2>Meunier da Troissy, Pinot da A\u00ff<\/h2>\n\nIl vitigno principale \u00e8 il <a href=\"https:\/\/www.lebendigeweine.de\/it\/sorte\/pinot-meunier-muellerrebe\/\">Pinot Meunier<\/a> \u2013 a Troissy l'uva dominante, spesso sottovalutata, qui riabilitata. L'<a href=\"https:\/\/www.lebendigeweine.de\/it\/arietis-vandieres-brut-nature-nv-alexis\/\">Arietis<\/a> da Vandi\u00e8res mostra cosa sa fare il Meunier: Brut Nature, zero dosaggio, frutta pura con grip. Dal Grand Cru A\u00ff proviene il <strong>Pinot Noir<\/strong> per l'<a href=\"https:\/\/www.lebendigeweine.de\/it\/alexis-ageius-ay-grand-cru-brut-2017\/\">Ageius<\/a> \u2013 potente, strutturato, con anni davanti a s\u00e9. Entrambe le case hanno pi\u00f9 in comune della sola regione: cavalli invece di trattori, fermentazione spontanea invece di lieviti selezionati, pazienza invece di efficienza.
