Una <strong>certificazione biologica ufficiale<\/strong> volutamente non ce l'ha, ma documenta la sua pratica sulla parola. I ritmi cosmici entrano nella potatura e nell'imbottigliamento, senza che lui si sottometta per intero al regolamento biodinamico. \u00abSi tratta di uve sane\u00bb, dice, \u00abnon di ideologia\u00bb. Tiene bassi i rendimenti e alto il lavoro manuale. A seconda dell'annata i vini maturano da 15 a 20 mesi in botti di rovere, con una quota di legno nuovo sotto il 50%. Per i suoi Premiers Crus, come il <a href=\"https:\/\/www.lebendigeweine.de\/it\/volnay-1er-cru-carelle-sous-la-chapelle-aoc-2021-jean-marc-thomas-bouley\/\">Volnay 1er Cru \u00abCarelle sous la Chapelle\u00bb<\/a>, sceglie botti che incorniciano il frutto invece di coprirlo. Fermentazione a grappolo intero e fermentazione spontanea sono la regola, chiarifica e filtrazione l'eccezione.
