Kai Sch\u00e4tzel vi coltiva un <strong>clone Sch\u00e4tzel proprio<\/strong> in impianti di 30-40 anni: piccoli acini dalla buccia spessa, che danno vini concentrati di straordinaria freschezza. Mentre il Silvaner in Rheinhessen viene spesso liquidato come vino quotidiano, Sch\u00e4tzel mostra il potenziale del vitigno a un livello che pochi produttori di <a href=\"\/it\/sorte\/silvaner\/\" title=\"Il vitigno Silvaner\">Silvaner<\/a> raggiungono. I suoi VDP.GROSSE LAGEN, <strong>Pettenthal<\/strong>, \u00d6lberg e Hipping, sono tra il meglio che i vigneti tedeschi possano offrire. Al Pettenthal, dove coltiva viti anche la vicina <a href=\"\/it\/kuehling-gillot-battenfeld-spanier\/\" title=\"Weingut K\u00fchling-Gillot & Battenfeld-Spanier\">K\u00fchling-Gillot<\/a>, nascono Riesling di enorme profondit\u00e0.\n\n<h2>Il Kabinett come disciplina regina<\/h2>\n\nMentre altri viticoltori puntano su forza ed estrazione, Kai Sch\u00e4tzel sceglie un\u2019altra strada. Il suo <a href=\"\/it\/riesling-kabinett-2025-schatzel\/\" title=\"Sch\u00e4tzel Riesling Kabinett 2025\">Riesling Kabinett<\/a> con appena il 7,0 per cento di alcol non \u00e8 una concessione allo spirito del tempo, ma una convinzione. L\u2019equilibrio tra <strong>dolcezza e acidit\u00e0<\/strong>, la leggerezza piumata unita alla profondit\u00e0, richiede un lavoro meticoloso in vigna. Fino a sei passaggi in vendemmia, selezione estrema, raccolta precoce per la freschezza. Stephan Reinhardt del Wine Advocate defin\u00ec allora Sch\u00e4tzel \u201cuna delle scoperte pi\u00f9 entusiasmanti e interessanti della cultura vinicola tedesca\u201d. Il <a href=\"https:\/\/www.lebendigeweine.de\/it\/naturweiss-2024-schatzel\/\" title=\"Sch\u00e4tzel Naturweiss 2024\">Naturweiss<\/a> mostra questa filosofia a livello di vino aziendale: riduttivo, con spigoli, ma mai volutamente diverso. Insieme a Jule Eichblatt, arrivata in azienda nel 2020 e oggi co-responsabile, Kai Sch\u00e4tzel porta avanti anche la certificazione biodinamica: dal 2023 l\u2019azienda porta il <strong>marchio Demeter<\/strong>.
