Dal 2009 lavora con <strong>infusione di uve intere<\/strong>: gli acini rimangono interi, non vengono schiacciati, niente pompaggio sul cappello di vinaccia. \"All'inizio c'era ancora un po' di pigeage\", dice, \"oggi non rimestiamo pi\u00f9.\" Il risultato sono vini di una leggerezza e bevibilit\u00e0 senza pari nel Priorat.\n\nI <strong>15 ettari<\/strong> sono coltivati biologicamente e biodinamicamente. Huber \u00e8 tra i pi\u00f9 precoci nella raccolta della regione \u2013 contrasta le estati calde con preparati biodinamici in vigna e una vendemmia che altri definirebbero troppo precoce. Il <a href=\"https:\/\/www.lebendigeweine.de\/it\/terra-de-cuques-negre-2022-terroir-al-limit\/\">Terra de Cuques<\/a> come vino di paese offre l'accesso \u2013 succoso, diretto, immediatamente accessibile. Sopra le selezioni di cru: Les Tosses, Arbossar, Dits del Terra.\n\nIn cima c'\u00e8 <a href=\"https:\/\/www.lebendigeweine.de\/it\/les-manyes-2023-terroir-al-limit\/\">Les Manyes<\/a>, che nel 2016 \u00e8 stato il primo vino spagnolo di sempre a ricevere 100 punti da Wine Advocate. Non per potenza, ma per <strong>finezza e precisione<\/strong>. Un Priorat che profuma di violette e ardesia bagnata, non di more sovramature.\n\n<h2>Per la compiacenza il Priorat \u00e8 il posto sbagliato<\/h2>\n\nLo dice meglio lo stesso Huber: la regione non perdona compromessi. Quello che cresce qui deve adattarsi all'ardesia, al caldo e ai pendii ripidi.
