They don't know exactly, but first writings date the origin to the 16th century. R\u00e9mi Jobard's philosophy can be summed up in a few words - a lot of work in the vineyard, as little intervention as possible in the cellar. The wines are consistently aged in wooden barrels, whereas the use of new barrels is deliberately kept very moderate with only one fifth. For some years now, R\u00e9mi has also been using Stockinger's half barrel (600 l). He is pleased to note that this keeps the wines lean and mineral, and the barrels do not change the character of the wine. R\u00e9mi wants complex wines with layered aromatics, not ones dominated by wood and vanilla notes. He deliberately avoids filtration.
