They pay respect to the place where he spends many, many hours with his people in the perfectly tended vineyard, as well as to his own conception of winemaking. And here it is that the grapes are harvested early and yet ripe, that the wine is bottled with 11.5 % alcohol and 8.5 % acidity with 6 grams of residual sugar. The aroma here is initially dominated by the fairly typical bokery, reduction, which is expressed in notes of a freshly lit match and bacony notes. Only when this has evaporated, one perceives freshly cut pome fruit including its peels, in addition herbs and wet stone.<\/p>\n<\/div>\n<h4>Palate<\/h4>\n<div>\n<p>On the palate the <i>Mount of Olives<\/i>This wine, which is only available in very small quantities in 2017, is absolutely precise, crystal clear, fresh, lively and electrifying. At the same time, the Gro\u00dfe Gew\u00e4chs shows a remarkable substance and creaminess. Aromatically, again in the realm of pome fruit, herbs and a bit of citrus, one also has the feeling of catching something malty.
