The Clos Windsbuhl, situated on ancient sedimentary limestone at the edge of the forest, was only harvested four weeks after the official start of the harvest in 2015 - a courageous wait that pays off in every drop.<\/p>\n

This Riesling requires patience and oxygen. At first it is reserved, then a fascinating interplay of flavours unfolds: Almonds<\/strong>, light-coloured nuts<\/strong>, Wine yeast<\/strong>, delicate smoky nuances and light-coloured tobacco<\/strong> dominate. With air contact Pomelo<\/strong>, pink grapefruit<\/strong> and small red apples<\/strong>. The exuberant minerality is breathtaking - less fruit-orientated, but with a complexity reminiscent of great Burgundian white wines.<\/p>\n Distinctive, bone-dry and with crystalline precision. The magnesium-rich limestone soil lends a characteristic, almost grainy texture and a demanding, salty minerality that immediately stimulates salivation. Nutty<\/strong> and yeasty notes<\/strong> characterise the appearance, accompanied by discreet Citrus<\/strong> and Apple peel nuances<\/strong>. The acidity structure is lively and precise - this wine has what it takes to age for decades.<\/p>\n With 12.5% alcohol and minimal residual sweetness, this Riesling presents itself as an almost Burgundian-like, dry character wine. The magnum bottle guarantees an even slower, more harmonious development. The 2015 vintage from Alsace is considered excellent - concentrated, but with perfect balance.<\/p>\n The intensity and minerality of this wine call for equally refined dishes: Risotto with white truffle<\/strong>, Turbot wrapped in fennel with Riesling shallot sauce and caviar<\/strong> or Young pheasant on savoy cabbage with smoked bacon and Riesling sauce<\/strong> are ideal accompaniments that emphasise the complexity of the wine.<\/p>\n Be sure to decant! This wine needs at least two hours of air contact or - even better - several years of cellar ageing.
