The soil is predominantly clay and limestone with a high percentage of rock and stone fragments. The vineyards are located on a hill 300 metres above sea level with an eastern exposure. After harvesting, the grapes for this Recioto are dried until mid-April, until they yield a potential residual sugar content of about 120 to 180 grams per litre. After pressing, the must is fermented in stainless steel tanks at a maximum temperature of 18 \u00b0C and aged for 24 months in 225-litre barrels. After bottling in 500 ml bottles, the wine is stored for another four months before it is sold.<\/p>\n<\/div>\n<h4>Colour <\/h4>\n<div>\n<p>Dark ruby garnet with violet reflections.<\/p>\n<\/div>\n<h4>Nose <\/h4>\n<div>\n<p>The 2015 Le Tordare Recioto from Ca' la Bionda entices the nose with a synphony of fresh, dried, pickled, candied and chocolaty cherry, the red-black stone fruit shining in all its glory and backed by high-priced and high-proof dark highland chocolate. With this wine, the basic idea of Mon-Cherie is elevated to the heights of the highest patisserie art and sparkles out of the goblet in a powerful ruby - in your face!<\/p>\n<\/div>\n<h4>Mouth <\/h4>\n<div>\n<p>On the palate, too, full cherry power ahead and a full parade of chocolate! The creamy texture is channeled viscously with a silky flow and comes across as light-footed thanks to the high Corvina content.
