The violet floral notes are almost reminiscent of a young Brouilly - juicy, fresh, with a hint of <strong>Yeast<\/strong> and <strong>Iron<\/strong>. This aromatic consistency across different vintages is the hallmark of this vineyard.<\/dd>\n<dt>Palate<\/dt>\n<dd>Juicy and <strong>silky<\/strong> On the palate, the 2019 combines the ripeness of the 2017 with the freshness of the 2018. <strong>Fruit sweetness<\/strong> meets <strong>Tart herbal notes<\/strong> and <strong>Liquorice<\/strong>-spiciness. The tannins are finely polished, and the whole-grape fermentation gives the wine <strong>Grip<\/strong> and <strong>Structure<\/strong>, without being overpowering. The acidity is lively and <strong>mineral<\/strong> - A wine with backbone and finesse at the same time.<\/dd>\n<dt>Departure<\/dt>\n<dd>Silky and spicy finish with notes of <strong>Liquorice<\/strong>, <strong>Foliage<\/strong>, <strong>Undergrowth<\/strong> and a touch of <strong>dark pepper<\/strong>. Medium length, with beautiful aromatic persistence.<\/dd>\n<dt>Terroir &amp; origin<\/dt>\n<dd>The Premier Cru location <strong>Les Lavi\u00e8res<\/strong> - named after the flat limestone boulders (<em>laves<\/em>), which were once used as roof tiles - is located in Savigny-l\u00e8s-Beaune in the direction of Pernand-Vergelesses. Chandon de Briailles cultivates 2.61 hectares in the heart of this 17.66-hectare site. The <strong>50 year old vines<\/strong> rooted in a south-south-easterly orientation on a complex soil of <strong>Sandstone<\/strong>, <strong>Marl<\/strong> and <strong>ferrous oolite<\/strong> in the upper and <strong>crumbly limestone<\/strong> in the lower area.<\/dd>\n<dt>Grape variety &amp; vinification<\/dt>\n<dd><strong>100% Pinot Noir<\/strong>, spontaneously fermented in a wooden cuve with <strong>Complete whole-cluster fermentation<\/strong>. Matured for 14 months in <strong>Barriques and tonneaux<\/strong> with minimal new wood content, without racking or decanting. Bottling with <strong>minimal sulphur<\/strong>, often straight from the barrel - a purist approach that lets the terroir speak for itself.<\/dd>\n<dt>Food pairing suggestions<\/dt>\n<dd><strong>Wok-fried beef strips<\/strong> with sesame seeds and soya sauce, <strong>Poule au pot<\/strong> or <strong>Potato and Porcini Gratin<\/strong> - The wine harmonises with spicy meat dishes as well as with earthy mushroom flavours.<\/dd>\n<dt>Special features<\/dt>\n<dd>A prime example of the aromatic consistency of a great vineyard site across different vintages.
