Maturing process
\nThe wine follows a natural rhythm, initiated by spontaneous fermentation in tonneau, followed by an additional spontaneous malolactic fermentation. Once fermentation is complete, it remains on the full lees until the beginning of June and is then separated from the lees by means of fall pressure and bottled unfiltered with a touch of sulphur. Special attention is paid to avoiding high alcohol levels during the harvest in order to allow the fermentation-related fineness, freshness and elegance to take their place.<\/p>\n
Vineyard site
\nThe vineyards from which this wine comes are located in the west of the Reiterpfad near the forest. They are unique in that they have limestone alongside the typical red sandstone and clay in their soils.<\/p>\n
Colour shade
\nThe wine shows a solid medium golden yellow.<\/p>\n
Bouquet
\nAn intense yeast aroma meets an abundance of fruit. Apple, fresh pear and especially orange in all their diversity set the tone. Aeration lets it show its full range and reveals aromas of ginger, lime oil, coriander and privet blossom. Its youthfulness still holds back some of its true beauty.<\/p>\n
