Just 0.6 hectares are classified as Premier Cru there, an area twice as large above Premier Cru is Village. There is an underground water source there that always supplies the vineyard with enough water. The vineyard was planted with a S\u00e9lection massale in 2000. Apart from Thomas Morey, only Dominique Derrain should actually own a share of Le Puits. The vineyard faces southeast and is situated above the village of Saint-Aubin on a predominantly calcareous, rather white soil with a fairly large amount of small pebbles. The first wine was made in 2002. Thomas Morey recommends a four-year bottle ageing. Fermentation takes place with indigenous yeasts in a combination of neutral barrel and tank. Malolactic fermentation takes place naturally and the wine remains on its lees without any b\u00e2tonnage. The new wood content is around 20 %. Sulphur is only added in the last six months in the barrel, and several times with minimal doses, so that the wine never exceeds 35 mg\/l in total.<\/p>\n<\/div>\n<h4>Colour<\/h4>\n<div>\n<p>pale straw yellow<\/p>\n<\/div>\n<h4>Nose<\/h4>\n<div>\n<p>Thomas Moreys <em>Saint-Aubin \u00bbLe Puits\" <\/em>shows itself elegant and fine. The Chardonnay offers an impressive amount of white fruit in 2019. The notes of yellow apple, pear and peach seem dipped in cream and cr\u00e8me, refined with a little pineapple and kumquat.<\/p>\n<\/div>\n<h4>Palate<\/h4>\n<div>\n<p>At first, the palate shows a fine melting, which is a combination of creamy notes and ripe pears, apples and peaches in combination with slightly exotic notes, as in the fragrance. But then, with air and time, more and more stone and minerality show up, the acidity becomes more lively and accompanies the fruit in a discreet way.
