It is a N\u00e9gociant project, where the vintners switched to organic and then to biodynamic cultivation. In the meantime, the vineyards have been <em>Ecocert<\/em> certified. The <em>Champagne<\/em> comes from the Les Revers vineyard, which faces north, lies at around 255 metres and is densely planted with around 7,500 vines per hectare. It is a single-varietal Chardonnay from a vineyard with Cimmerdige limestone in the subsoil and loam and clay in the topsoil. The vineyard is located near Buxi\u00e8res-sur-Arce. Whole grapes were pressed, fermented spontaneously, aged in used 350- and 500-liter barrels, followed by 15 months of yeast aging. The <em>Brut Nature<\/em> was disgorged on 18. 10. 2020.<\/p>\n<\/div>\n<h4>Colour<\/h4>\n<div>\n<p>medium straw yellow with continuous perlage<\/p>\n<\/div>\n<h4>Nose<\/h4>\n<div>\n<p>The <em>Les Revers<\/em> is a <em>Champagne<\/em>, which is closer to Chablis than to the C\u00f4te des Blancs from its entire base. It is the representative of a cool region and the Kimmeridge limestone in the subsoil. And this shows on the nose through a clarity and precision that is already evident in this young <em>Champagne<\/em> is fantastic. The aroma from the glass wafts over with notes of iodine and sea, oyster shell and salt lemon, some herbs and wet lime, a little crunchy stone fruit and a hint of freshly cracked nuts.<\/p>\n<\/div>\n<h4>Palate<\/h4>\n<div>\n<p>On the palate the <em>Les Revers <\/em>just what you expected from the scent. The <em>Champagne<\/em> has the <em>lucky punch<\/em>It shows power and pressure, freshness and minerality. It is clear and precise, always on the very bright white-yellow side with a few sprinklings of green ripe notes, blond tobacco, some graphite, white flowers and a fine tart note of grapefruit abrasion.
