Immediately afterwards, our olfactory senses are conquered by the freshness of lemon peel, cedrat lemons and a surprising smoky minerality. A spicy citrus turn with lemon thyme, lemon verbena, preserved lemon and a hint of resinous incense is hard to miss.<\/p>\n
From the very first sip, the Chiesa Nera reveals its creamy full-bodiedness and complex expression, which the twelve months of yeast ageing gives it. The flavour profile is varied and includes tangerines, quinces as well as white peaches and apricots, rounded off with subtle notes of anise, sage and thyme. A subtle yet persistent salty note develops, reminiscent of seaweed. Fermentation and maturation in concrete add another dimension of minerality and tension, while the natural freshness emphasises the citrusy character and length of the wine. This white wine is without doubt one of the best in Corsica.<\/p>\n
